Warthog did have probably the biggest "Holy shit" moment for a in game vehicle for me.

But as favorite to drive, I would go with the Ferrari F50GT. I have to buy one in every racing game.

Cobra from Age of Empires 2.

The Rhino tank from Vice City. That thing was invincible. I remember doing the vigilante mission for hours in the tank, maxing out my money.

The horse cart from Red Dead Redemption. Much like the aforementioned Warthog, many a good time was had dicking around in the cart with friends in co-op.

As for solo experiences, the VTOL jet from Saints Row 3 was pretty damn awesome.

Axel from Twisted Metal. I mean, he was the vehicle!
Michelle and Comet from GTA 2. Oh, and the tank, too.
Van in Burnout Paradise

Any of the airships from the Final Fantasy Series. Notably The Highwind from FFVII, Ragnarok from VIII and whatever the ones in IX were.

My favorite is the Elephant in Halo 3, simply because of the hilarious effect of flipping it (it's a very large vehicle)

Although FWD is lame-o IRL, this car was ridiculously manipulative because of all the traction it had. Front tapering was also good to launch some higher cars.

Gran Turismo 1:
Mitsubishi GTO '95 MR
Pretty much every LM variant. The imagination and meta they tried to create without having exotic car licenses was something of its time for me. Things like Maximum Tune, Initial D and stuff made more sense to me. I think the franchise has grown well, but nothing can recapture what they did here in a very limited and unheard of space.

Ridge Racer Type 4:
Assoluto Bisonte in the RTS livery (title car). Not a fast car but the aesthetic and cinematic portrayal really did something for me as far as envisioning Italian sports cars in silver. The livery kinda became memorable in that right.

From then on, much of the vehicle-based games I've played were in the Gran Turismo series. It sorta became a wash for the most part because that game became a sandbox to use cars as tools moreso than pick a favorite for the most part.

Standouts:

Gran Turismo 5:
Lamborghini Murcielago LP640 the Toscana special event was pretty much as "Need For Speed" esque as the game would get.

The Ferrari F40 is my favorite car of all time, but for some reason I just can't come to wanting to mess with it too much. In Gran Turismo 7, it's as good as it's ever been, but I think it's a "meet your heroes" problem and I don't want to see it fall in my lap time charts.

Hmm, maybe something from Ace Combat 3 or 5.

Winged Star from Kirby Air Ride. Flying around in that game feels great.

skateboard from Bully. Faster than the other vehicles by a good amount if you keep shifting left and right.

For every game I have played that had more than a handful vehicles, there's always one that I like more than the others, even when it's outclassed by the others in almost every regard.
Like Test Drive Unlimited 2. It had a wide assortment of expensive sports cars and exclusive top-end rarities... and a half-secret, unlockable 1973 Volkswagen Beetle.
I racked over 1000 kilometers with it!

In the older GTA games, I have a preference for the "crappy" cars.
To name a few: Oceanic, Manana, Regina, Virgo; weighty 1950s car, anemic econobox, wood-trimmed estate wagon, boaty 1970s land barge.
They dont have have speed, but they have the style!
This carried over to the nwere GTA games, of course, where I too preferred looks over speed. The 1970s Cadillac-esque Emperor is a perfect for the aesthetics of Liberty City, so how could I not make it my personal choice of vehicle?
