In order for this to work, there would have to be some actually engaging gameplay for crafting and it would need to have a bunch of difficulty tier progression identical to the adventuring side.

Could make it that they can leave the city and go anywhere but would get destroyed in any kind of combat. Instead of fast travel they pay adventurers/mercenaries/bodyguards to escort them around outside the cities. Game could also offer a caravan system but that could potentially get attacked.

Of course, none of this would actually happen on a game created by a company that would have the resources to do it properly. Let alone a playerbase that would adhere to these roles rather than just continuously exploit them.

Because the vast majority of people wouldn't play the non combat class. If this were to be a thing, there would need to be a lot of other stuff to do than just crafting stuff for others.
There are definitely people that prefer to just do busywork in games. I've played plenty of survival/crafting games with people that generally prefer to hang around at the base, taking care of crops/pets,... But they still have the freedom to go explore whenever they wanted.

The only way I could see your specific idea work somewhat is if the non combat classes are allowed to travel the world like any other class, but they need the other classes with them for protection.

Let crafters leave town, but have minimal combat ability. Encourage the hiring of other players for protection.

Allows entire economies to rise up around mercenary groups, reputations, ect.

FFXIV 1.0 was like this to a degree
you could complete the story as a crafting/gathering class without ever leveling any combat class
and there was an NPC companion character you could customize that did story missions with you and stuff. mine was a miqote archer iirc
afaik some of the crafter/gatherer combat abilities still exist (like stealth for gatherers) but there was stuff like a stun ability too

been more than a decade since i played 1.0 but i dont think the warrior of light stuff started until ARR. you were just an adventurer and a member of the path of the twelve iirc

This could be kind of cool, but the game would actually need enough dedicated crafting characters to somehow fill the majority, if not all of the crafting economy.

It'd probably be easier to just do something like have crafting take up a bunch of levels out of a certain amount, so if you wanna be a master craftsman and start a business, you're not gonna be able to fight anything too tough, but not be 100% defenseless without someone else.

Gotta really make fighters need crafting often and have to rely on it too.

There should probably be some sort of combat available to the non-combat classes. Maybe have them fight more mundane threats that are endemic to the crafting environment, such as wolves and foxes for farmers, bears for foragers, bats and gophers for miners, or crabs and sharks for fishermen. The actual combat classes would be a step above and they'd be the ones to combat the more fantasy monsters like skeletons and demons and whatnot.

That's kinda cool, but how would you balance like "end game" ?

Closest thing I can picture is how RuneScape sorta worked, some people focused a lot on the game and all skills, others focused just on.. the economy.

Yea but you can also be combat. You just switch back and forth. I'm thinking of permanent crafting. You wouldn't ever be able to be a warrior or mage. You are locked in as just a crafter
