I've come across this sentiment a few times lately.

I'd like to understand it better.

My current leading guesses are something to do with nostalgia and something to do with being set in your ways.
Those aren't mutually exclusive though.

I never wanted to play Catherine because I don't like puzzle games usually but I also didn't want to just play it on story difficulty either out of respect.

Sometimes a game just isn't your genre anymore but can be still interested in the game.

I don't even mean individual video games.
I mean like what happens with some wrestling fans. They get sick of watching the shows but they still want to be around wrestling sphere, catch the high points and make fun of the dumb stuff.

I'm seeing something like that with video games. They gradually seem to lose interest in playing them but continue to enjoy the talking points related to them.
What is that?

It means you've consumed the product for so long you start noticing the repetition, and are bored of that. Instead, you can save yourself a ton of time and effort, and just consume the best bits.

It doesn't mean depression. Just well traveled.

After I posted I feel like I missed your point, but I still felt like what I typed had some value. I never minded watching a friend play a game I didn't like per se. Let's Plays and well Twitch really became things.....

Oh Wrestling is something I like too but sometimes I am just too depressed to buy into it or I have anxiety, but I never would watch Wrestling to trash like some ppl. Of course the WWE definitely sucked at times, but I try to keep up on it and a little AEW.

That seems plausible. The best bits are so readily available.

A game comes out. It is immediately stripped for parts. The music is on YT. The story (either full or a supercut) is on YT. Anything worth mentioning is quickly compiled and showed around.
What is the game left with? A price tag and some gameplay that can't promise to be good... but it might be.

Explains being uninterested in newer stuff, but doesn't really explain dropping old favorites in exchange for talking points.
