I mean, if it's the only way to extricate yourself from the situation, yes. Aside from the damage someone biting you with full force could do on it's own, there's the risk of disease.

If someone puts you in physical danger, it's fair to do anything to get yourself out of that danger. But once you're no longer in immediate danger you no longer have the right to harm somebody.

Was the bite all they did to you or was it just the beginning? If they bite you and back off walking over to them and stabbing them is too much. But if they biting in the middle of a crazed attack then using a weapon to stop them is fair game.

Knifing someone seems excessive, but I guess it depends. If someone bites me, I'm probably going to hit them reflexively, and if that was it of course I'm not going to run over and stab them, but if they keep after me and are a threat, then whatever it takes. I don't walk around with a knife, though, so realistically it's never going to go that way.
