Super Mario Galaxy 2 has a Rainbow Ride track for one of those levels where you balance on a ball with a ball with a star in it.

It's in F Zero X as part of an expansion pack, not a Mario game but still neat.

Rainbow Road 64 in 8, Rainbow Road SNES in 8, and Rainbow Road in Super Circuit are in the night sky, not space.

The star - In Super Mario Galaxy 2's Rolling Coaster Galaxy - is literally called "The Rainbow Road Roll." I'm taking it. Edit: Oh fuck I did write Rainbow Ride, the guy above me must have distracted me.

In Double Dash, Rainbow Road's not really in space either, more the night sky above a city.
