Just wondering.

I like a nice thick cut. Leave it on the counter for about an hour, some kosher salt, some pepper and some smoked paprika on each side, sear in a smoking hot cast iron skillet for a few minutes a side until medium rare. Let it rest for 5 minutes, cut against the grain and enjoy.

I want to get a camp stove or some kind of outdoor cooker for my steaks cause they smoke up the house something fierce when I cook them inside.

I throw some butter in a pan with a sprig of rosemary and sautee the steak in it, while spooning the butter over the top of the steak.

rub in some salt and pepper, heat a skillet real hot, toss it in with a little butter and cook for about 5 minutes, flip and do the same on the other side for another 5. done

sometimes ill use a little olive oil instead of butter but i dont deviate much beyond that

Prep:

Leave it on the counter for at least 30 minutes, but it depends on the thickness. For a very thick piece, 1 hour may be necessary.

Salt and pepper right before it touches the pan. I get my cast iron or stainless steel pan very hot, if the piece is thick I might go 10-15% below the highest heat possible.

Important: I use an instant read thermometer. Every other technique hasn't yielded consistent results, a thermometer ensures the result is always exactly what I want it to be. Medium rare for a ribeye, sirloin, filet, skirt, etc.

  1. Veggie oil in when pan is hot
  2. Salted & Peppered steak in
  3. Flip once after 1-2 minutes (again, depending on thickness)
  4. After flipping, 1-2 pieces of garlic, butter, rosemary and/or thyme
  5. Baste the steak with the aromatic butter for 2-3 minutes
  6. Flip one last time and leave it on the pan for another minute
  7. Remove from pan and place onto plate, covering with aluminum foil for up to 10 minutes

Basically this, except I don't flip twice or cover with aluminium. I just cook longer on the first and second sides, and let rest uncovered, so there's less carryover cooking.
