My dad wants to try some games out. He's a veteran tabletop player, but the only video games he's played (that I can name) are Minecraft (in creative mode) and Baldur's Gate. He's not to good with quick reactions, so I directed him to Final Fantasy X. I'm sure there are other games that would work as an introduction, but I can't think of anything off the top of my head.

I had a 50-year-old coworker who played D&D a lot, and coincidentally, his first modern RPG after the SSI Gold Box era was also FFX.

I know New Vegas is a strange suggestion for a 'beginner' game, however:
  • if he's a tabletop vet, he might appreciate the more open-ended story and depth of roleplaying / character building
  • a VATs build can help get around the slow reflexes, supplemented with a high Speech / skill check build to talk his way around / out of fighting as much as possible. Another combat option is a Melee build centered around the arguably-broken Super Slam perk, which will keep enemies locked in a near-perpetual state of knockdown and let him hack away wildly.
Again, probably not the best choice overall, but you never know.

I was thinking something similar, like one of the Yakuza games, that's basically a turn based RPG

If he has experience with the Baldur's Gate isometric games, could try the other ones in that style - Icewind Dale series for an older game and then Pillars of Eternity and Divinity: Original Sin for newer games in that style.

Pentiment is a new game by Obsidian and a very easy one to play, as mostly just moving about and making choices. No real puzzles (other than using your mind) or anything that requires reflexes. Absolutely wonderful and easy enough for almost anyone to play. Lots of "ease of use" choices as well, if at all needed.

FFX is too complex. At least the sphere grid

Pokemon is also too complex

Have him play Paper Mario 64

10-2 is a little easier to understand, but is somewhat speedy for a introductory level, and can quickly get complicated depending on the dresspheres and Garment grid

The sphere grid is only complex if you try doing something besides following each character's basic path. And Pokemon shouldn't be too complex for anyone over the age of 8.

I say paper Mario 64 cuz

- Easy, straight forward story
- simple rpg combat involving simple timing and tilting the control stick. The most complex thing in the game is a random button combination, and baking a cake
- simple partner abilities and badges
- some puzzles might be a little tricky, but as he gets accustomed to the games rules, he follow through most likely
- simple math rpg. 6 atk - 2 def = 4 damage. Easy enough

If you are up for playing with him you might go off of the Minecraft line and try Satisfactory. It even has an option that lets you "turn off" enemies in the accessibility options.

Otherwise Stardew Valley, Divinity 2, and Grim Fandango come across as the most obvious ones to get him to try. Varying levels of slow paced, they all are pretty easy for someone who hasn't played video games to understand. Divinity 2 definitely is an outlier, but considering that your dad has already played Baldur's Gate I struggle to believe that he wouldn't be fine.

I've got a lot of games for N64-Switch, GB-3DS, PS1-PS3, PSP, and Xbox-Xbone. He doesn't have a gaming PC, but it shouldn't have much trouble running lower-end games.

For Switch I'll recommend Live A Live and Kirby and the Forgotten Land.

And if you have it, see if he can handle Symphony of the Night. That game is an absolute classic that everyone should experience, and it's such an easy game to make yourself overpowered in that he shouldn't have too much trouble with it.
