Vietnamese food really isnt particularly spicy by default. The chilli is normally added at the table.

Comes close. My girlfriend is half Indian, though, and from what I've heard the Indian food her dad eats in India is way hotter than the Indian food you typically eat here in the US. I know a lot of places tone it down and I've heard lots of Indian customers complaining about it. Her dad visited NYC a few years ago and brought back some bhindi that he requested so insanely hot that I could barely eat his leftovers.

I find actual Thai food to be much hotter than actual Indian food, but find that the reverse is true when youre further away.

Korean food can be surprisingly spicy. From the restaurants Ive been to in California, Thai is way hotter than Indian while still being delicious. Like a 5/5 spice Indian place compares to 3/5 Thai. Both still delicious.

Was not aware Vietnamese food is known for being spicy, tho I like my pho with a bit more pepper.

As I said before, Vietnamese food is not spicy. You add the chilli yourself at the table (and many Vietnamese people choose not to). Its all according to your own personal taste.

I'd agree with this. Indian spice is more consistent across restaurants I've been to compared to Thai. The staff at both will sometimes "you want very spicy? lol ok white boy" me and not actually give me thai hot or level 5 Indian spice like I ask. While I've had Thai and Indian knock me on my ass when they give me the level I ask for, I think Indian slightly beats out Thai from my experience.

Vietnamese have a chili oil that they use in tons of places. While it's usually in pho, there's usually not a lot of it. Other dishes can vary.

Out of those the spiciest I've had was Thai, but Indian food can get up there from what I've had. I spent a year living in South Korea and never really had anything that was terribly spicy.

If you got a Korean market near you see if you can find a frozen super spicy tteokbokki kit that you can make at home yourself and add the entire spice packet.
