It's been a while since I watched through this series.

Was it ever stated anywhere what happened to the cop that helped Andy and his mom in part 1?

I believe that the mom was institutionalized, kinda like Sarah Connor. But what about the cop? He saw first hand the murderous doll.

No, but the creator has hinted of more legacy characters returning in the future so given the track record of the Chucky universe so far, I would not be surprised if the cop (and possibly Andy's mother) return(s) in season 3.
