Yes true, we have been having vegan cheese, butter, milk, buttermilk and curd at home. It's doing a near perfect job of replacing dairy, to the extent that it's even more confounding to think why we must rely on cattle for milk.

My kids both have a mild dairy intolerance so we avoid a lot but I wont compromise on butter. Plus all the vegan cheese seems to have potato starch which they are allergic to so thats out.

I see. I might try it with the instant pot's slow cooker function. I hate simmering it because my stove top is very crappy and it's hard to get a consistent temperature, so I have to babysit it and make sure it's not boiling. If I can set it and forget it, that would be grand.

Here's tonight's dinner, spaghetti and Moe balls made from cooked lentils, bread crumbs, and spices shaped into balls and baked. My sauce was too thick and ended up more like a coating. It would be really good for a party food eaten with toothpicks.

Dry beans are one of the cheapest foods. I think I got these for maybe like 10 cents a serving and used 4. The carrots were about a dollar for 16oz and I used a third of the bag. Russet potatoes were a 10lb bag for around $5 and I used maybe a pound. The most expensive thing in it was the pepper at 60 cents. There was maybe 20 cents of tomato paste. I buy bulk spices so it's probably not even worth calculating how inexpensive those were in this.

It's also probably closer to three servings. I have a skewed sense of what a serving is since I don't eat conventional portions.

I don't know how much Yukon potatoes are where you are but they're usually twice as much as Russets here and I wouldn't use them in a chili, stew, or anything that's going to obscure the flavor. That's a standalone potato imo, maybe roast them with some herbs but not much more than that.

Mushrooms are also not something I buy except for the rare occasion because they're tasty and all but not worth the price per calorie. I usually buy the cheapest button mushrooms if I do, which are like a quarter of the price of baby bella mushrooms from what I've seen. I did like to go to H Mart because they had a good deal on oyster and King Oyster mushrooms, which are absolutely fantastic for imitating a variety of meats, but I haven't been since before the pandemonium and have no idea what those prices are like now. I have dabbled in growing them but not with great results. I may try again though.

No but my sister occasionally picks some things up for me. They're usually pretty good but their liquid egg replacement was really bad. They did have some really awesome veggie patties that I think are discontinued now.

It depends what I'm going for. If it's to use in a stir fry or something else that needs to have some chew to it, I'll put it in the air fryer at 300F until it's crispy, then add it in. If it's for a tofu scramble, I just drain it then add it into the pan after the veggies are adequately coked. Those are the most common ways I cook it.
