I might try it with the instant pot's slow cooker function. I hate simmering it because my stove top is very crappy and it's hard to get a consistent temperature, so I have to babysit it and make sure it's not boiling. If I can set it and forget it, that would be grand. Here's tonight's dinner, spaghetti and Moe balls made from cooked lentils, bread crumbs, and spices shaped into balls and baked. My sauce was too thick and ended up more like a coating.
