I am currently playing Cyberpunk. Some side quests are great, but many of them are generic crap. Still better than the average ubisoft side quests though

GoW: Ragnarok has a nice little side story for most of its side quests. The ones that don't have one are typically in the same area as the bigger ones, so you can do them all at the same time.

I feel like the first Borderlands had some good side quests. Especially in the Dr Neds DLC.

arkham city and onwards.

almost all sidequests are multistage quests usually leading to the capture of a villain by the end.
