I like mine cool in the center. Had one even a little cold once (seared about thirty seconds a side and called it good). I don't care what other people like, but that's my preference. When I order a steak I always say as rare as possible.

I prefer medium well myself. Love a hot pink center. When I was younger I liked my steaks well done but my step-dad cooked it so it was just barely well done. It was still a bit tender and still juicy. Was really good. My palate has changed since then
