Minus the bacon because I don't eat pork. Added couple potatoes.

Smells much better this time. Last time I forgot to get actual Guinness and tried some other dark beer. It wasn't bad, but the recipe seems to hinge on the flavors that come from the breakdown of Guinness. It never smelled quite right, nor tasted quite right.

This time it smells just like the Irish stew I used to get at an Irish styled pub in a town I used to live in.

And I don't exactly love Guinness. But it's drinkable. Especially after it warms up a bit. Tastes so boring when it's too cold.

It does have a bottle of beer. It adds flavor but doesn't end up tasting like beer at all anymore.

ah i was just wondering because 4tbsp seems like a small amount of normal tomato paste but i guess you probably don't want that strong of a tomato flavor

I've made this quite a few times, it's easy and tastes quite nice -- but like most Stews it tastes better on the 2nd day, rather than the first.

That's a good start!!
Rosemary, Basil and Galic with a bit of red pepper will work as well.
~Plus a bit of Clove Oil.

Oh that sounds interesting. I have basil and red pepper. There is already about 4 cloves of garlic in it. Never used clove oil.

sounds delicious! i love beef stew. i've never made it with Guinness though, or any beer for that matter. i'm gonna have to try that. i like putting some A1 in mine. and roasted garlic instead of minced, a whole bulb's worth.

Clove Oil is a secret ingredient. Just a few Dashes.
Olive Oil can and should be used at will!!

Agreed, and I understand what he said about no recipe.
But with soups and stews, you can really get away with that.
Really anything outside of baking. That is a whole other art.

Ya, I think that would turn my stomach.

I do want to try Fernet with Guinness sometime.
I'm not sure how it would work.

Draught works out a bit better than Extra Stout, but I'm quite fond of drinking blasphemy.

Ehh, leave the fat in. If you a want to thicken it up a bit as a some cornstarch. The the potatoes will do that.
