What's actually a little weirder than drinking the milk of another species is the distaste we have for drinking the milk of our own species once we're too big for diapers. We'll drink cows' milk all our lives, but not human breast milk even though that's the stuff that's made for humans to drink.

Honestly there could be a few scenarios that would make sense.

Watching the cow nursing its baby calves, and recognizing that human babies are fed milk the same way, it wouldn't be hard to put 2 and 2 together that the cow probably has some kinda milk in there. And when thirst and hunger are serious issues in early "societies", that would be a handy bit of information to spread around.

I could also imagine an early hunter killing an animal like a cow and finding the udders and a pocket full of milk while butchering the carcass and thinking "hmm, it's making this really nutritious stuff, I bet if I kept one of these alive and fed, I could just keep taking the milk whenever I wanted it!"

there's also a possibility that a baby's mother is unavailable to breastfeed, so the father are looking a replacement from cow or goats.
