My combined headphone/microphone audio jack evidently doesn't allow me to actually use the microphone on my headphones when they're plugged in, and there's no way to set it so that it sends the audio through my headphones but still uses the laptop's microphone.

There is tho. What your issue likely is is related to hesdphone v headset. But you said it yourself -- its a 3way (L R Mic) jack. So barring it being actually damaged, it's a you issue.

Ensure your realtek drivers are updated. Then, learn about input settings and play around with those.
