okay, besides eel i would say the most exotic meat i've had is probably reindeer sausage? there's a pizza place near me that has it as its signature specialty topping.

Kangaroo (this was like beef flavored chewing gum. Extremely tough meat)

Abalone - everyone who eats this says it's delicious but I hated it.

Ostrich (I really enjoyed this but extremely hard to find)

Alligator

Conch aka Scungilli

Razor clams (not exactly exotic but seems rare I can never find them except frozen in Asian supermarkets)

Tripe

Escargot

Pheasant

Quail

Not exactly meat but I've also made pasta sauce using squid ink.
