Considering the game had both Zora and Falco in the same time, as well as koroks and goron, you'd think they'd do an update on the hero's garb since the twilight princes design.

If you haven't already/didn't know, complete all 120 shrines. You'll get the BoTW version of the standard green tunic and cap.

Besides all of the above, I believe the devs also directly addressed this in interviews and stated that they went with a different color because in early tests link blended in too much with the environment.

At the beginning of development we drew a lot of landscape concepts. Link wearing blue clothes appeared pretty early on because the blue stood out against the backgrounds we were producing.

It was that, plus they wanted players to feel like Link wasn't already at full power:

Link is the games protagonist, so Ive always thought we need him to look cool. Yet, if we overdo it, the people playing the game might feel like theyre controlling an already accomplished hero, which I felt could get in the way of the players immersing themselves in the game. For that reason, this time I decided we should make Link a more neutral character in a variety of ways.

We thought that the iconic green tunic and hat had become expected, so we wanted to mix things up and update his look. Interestingly, though, nobody on the team said, Lets make him blue! It just organically ended up that way.

Producer Aonuma-san declared that we would be revising expectations by updating Link for this game. He wanted Link to be a more neutral character that players could see themselves as. You can feel how energized and excited the artists were about this idea from the really interesting modern concepts they drew. There were close to one hundred designs presented within the team for Link, and the number of sketches was too great to count.

It's not like he hasn't worn blue before.
TWW New Game+ even has you keep his islander outfit (although "technically" he's still wearing the Hero's Clothes, they're just invisible)

Personally, I'm more annoyed at Link being right-handed in the newer games.
I get why they did it for Skyward Sword and the Wii version of Twilight Princess, but Link being a lefty is one of his unique traits. There aren't many left-handed VG characters outside of sports games...

I was told Nintendo sold those tunics back to gamers as amiibos (a concept I'm still bewildered by, a toy with a barcode that acts as dlc, like an e-reader card but on a doll)

I should note that the Hylian Tunic dyed green makes a good substitute

I'm also partial to the Climber's Gear dyed green

This is actually really good thanks for posting, I agree with them makes sense to not want to have him blend in with fields of green too much if he has the green tunic

Using storyline reasons to justify a choice that was made outside of the game is dumb.

Because Nintendo basically decided in a much more open world game than past adventures, where you spending a lot more time running around, Link just looked better in blue when up against varied backgrounds, and especially on grass.

Yeah I remember feeling disappointed by the in-game version, that brown was so ugly and unappealing

Why weren't they included in the DLC though. I bought the DLC but I'm not gonna buy those toys just to get the costumes

Yeah I'm popping in the game again to see if I got the dark link costume since it's in-game and also gonna see about dying hero of the wild maybe it will help

To this day there are still a ton of things to discover and people experiment with the mechanics of the game

So it turns out I don't have the dark link set... it's weird I know I discovered that night merchant but maybe I never bought them from him so will buy them now

Night merchant sounds like a particularly classy euphemism for pimp

I tried that and realized it's not just the brown, it's really the shorts. The fact that he's not wearing leggings like oot or even tp/ss makes him look like the bug trainer in pokemon who likes wearing shorts. It just doesn't look right

I'm just found out yesterday I can change horse manes

Got the dark link tunic set. Weird that I didn't have it before, I had more than enough monster drops to get mon for it. It's cool for the first few minutes though I wish characters reacted to it or something. Can't even get it upgraded in the fairy fountain...

I wouldn't know, never bought one and not sure how it works. Is nintendo selling individual toys of each version of Link throughout the ages, or do they sell the one toy that provides the barcode for all the tunics and gear we want

I tried fighting ganon in the botw style tunic and dark link different tunics but got bored and couldn't complete the kill. I just tend to go for the warrior tunic since it says it increases attack damage so I just want to be able to take off more HP

I think you know the answer to that

There are six Link amiibo that each provide a different set:
Hero set - 8bit Link
Time set - OoT Link
Fierce Deity set - MM Link
Winds set - TWW Link
Twilight set -TP Link
Sky set - SS Link

There's also TWW Zelda, but I don't remember if she grants a tunic set or something else entirely
There also LA Link from the 2019 LA remake, but it's for the LA remake and doesn't offer any BotW exclusives
And of course there's Wolf Link, which unlocks a sort of wolf "familiar" in BotW but no tunic set
