What kind of tofu you got? Extra and especially super firm are your best choices. Anything else is going to be very difficult and not worth it imo.

What shape is the precooked tofu in? I would just mix my starch and seasonings into a bowl and then toss the tofu gently in it.

Press it for about an hour. If you don't have a tofu press, use a couple plates

Gently toss the tofu in the starch and seasonings

If your tofu says "Firm" or "extra firm" on the package and you press it for an hour it shouldn't fall apart.

rip it apart gently if you want fried-chicken-like, cut it if you want shapes.

always have to get the ultra super duper firmest tofu u can.

rip/cut it in half like a hamburger first too.

you toss the chicken-style bits in a bowl with cornstarch/soy sauce/oil or you sprinkle cornstarch over them after dipping in something like oil+soy sauce if you cut them into triangles.

spices go on it after you fry them, like one does with french fries.

Press it

o yea obviously this! you have to press tofu but you don't have to do it for like an hour. you can just press it until you get nothing out of it or get bored.

pressing via gravity for an hour is easier depending what u want do.

If you can find super firm tofu it doesn't require as much pressing

I make fried tofu all the time in my air fryer, here is what I do.

Press it dry then cut into cubes.
Put some soy sauce, worsteshire sauce, and teryaki sauce on it to marinate, I let it go overnight, but a few hours should be fine.
Next I put a little seasoning on it, then add on corn starch, nutritional yeast, and panko break crumbs. I add a little bit at a time and stir it all up making sure it is all coated. Spraying with a little oil or cooking spray usually helps it all stick a little bit better if it is too dry.
Then in the air fryer at 375 until it is how I want it crispy wise, about 15 minutes, shaking it several times.
