Every so often, I'll get on Gears of War UE and just join a co-op game in session. Doesn't matter where it picks up at - I'm just happy to be there. Sleeping Dogs is another one. I can just start it up and do a playthrough for as long as I want, just exploring, gathering and building along the way. The challenge is to keep things sort of fresh, like trying out new locations to build your seabase(s) at, what to build, and coming up with little (sometimes imaginary) challenges, like pretending to be unable to receive any messages, and thus have less reason to explore specific locations. Even though I know pretty much the entire game layout by heart now, I still try to explore around a way that makes sense, as if I'm exploring for the first time.
