Can you recommend a nutritious daily two meal prep plan that is fridge friendly for about a week, with easy to source ingredients? I don't mind eating the same thing every day but it has to have enough nutrition. I drink a powdered meal for breakfast.

Yeah sure. Chili is easy to make and fill with nutrients. You can mix beans with some other form of protein to make it more filling -- seitan is more protein-rich than even most meats are, but it's not considered a complete protein so you might prefer tofu instead. You can also mix tofu in rice or pasta or quinoa as well. I usually get a big tub of fresh mixed greens from Whole Foods or Walmart and keep it in the fridge, just throw it into dishes for extra nutrients.

Also, oftentimes vegan nutrition isn't just about what you make but it's about the ingredients you use. Flax, Chia, and Nutritional Yeast are all packed with important nutrients and barely alter the flavor of a dish if used moderately.

Ok. I was expecting a more methodical post with more details, but that's fine.

I really want to start meal prepping and I figure I might as well kill two birds with one stone. I guess my next question is maybe do you have a resource that goes into more detail? I shouldn't expect you to be my personal nutritionist I suppose.

Fwiw the last time I looked for vegan meal prep there were a bunch of weird ingredients that I'd have to order online and I don't really want to do that.

have you tried Graeter's 'Perfect Indulgence' frozen dessert? seriously the best vegan ice cream i've ever had.

how do you handle potluck style events where most people are not vegan? my family does these a lot and i'm the only vegan in the group. i hate having any expectations about people making food that's suitable for me, and i don't want to go around bugging people about what they make. i'm tempted to just bring a sandwich or something when i attend these

I can give you my favorite nutritional infographic. there are a lot of these you can find as free resources with a quick Google search, but this is my go to if I need to look at the nutritional value of things. Let me know if it helps.

One more thing I'd say is when you're first researching vegan nutrition the things that will be hammered the most are protein and Vitamin B12. between beans, nuts and legumes, tempeh, tofu, seitan, etc, I don't struggle with getting enough protein. B12 I think has been hammered so many times that it's already fortified in a lot of things like nutritional yeast and plant-based milks so I don't struggle with that either. I'm more concerned with the things like Iron and Calcium and the Omega-3 fatty acids.

I did try to go vegan at one point, but I had huge meat cravings because I wasn't getting enough protein I suppose. I can supplement that with powder.

I think meat cravings are normal when you're first starting out, something to do with the pheromones we get from eating delicious meat. but your cravings do change over time.

Haven't seen that brand yet but I'll keep an eye out for it. was ordering a fair deal of vegan meats and ice creams, but the online vegan marketplace got a little crazy and I stopped

I get how you feel about potlucks. I don't like making people feel like they have to not bring any meat or dairy. If I can make your own potluck dish, I do that, then I have at least one dish there that I can eat. Then hopefully there will be some potato chips, and maybe if you're lucky a salad without cheese or ranch dressing.

Last summer I went to a company lunch at the local diner and they were running a limited menu of two meats and a salad bar. I just painstakingly ate the salad and then ate more at home, so that's also an option but it is not an optimal solution

My parents-in-laws don't get veganism but are nice enough to usually cook the meat on the side and have some veggies or fruit for me to have when they're cooking. My biological mom gives less of a shit, I'm expected to have meat and dairy there or buy my own groceries but I only see her once or twice a year so it's not as big of a deal

The best vegan ice cream I've had is an oatmilk ice cream from Brewster's on the east coast. Otherwise it's just whatever's at the store. Usually Daiya. Like most Daiya products, it's decent. They started selling vegan ice cream at the store 30 minutes away recently, but I've been without a car for the better part of a month so haven't been able to get it. I try brewing my own ice cream every once and a while but I don't have the right kind of equipment for it and can't get quite the right consistency.

It's an interesting question, but depends on some different factors. I think if all or even most vegetables were sentient, you'd have to kind of make a concession somewhere. It's hard enough to sustain your body on just plants, but cut out a high percentage of vegetables from that and it'd just become ridiculous. But animal sentience alone isn't the reason that I became a vegan. It depends on the treatment of animals that are subject to factory, and if that treatment would translate to vegetables or not.

So if vegetables were sentient, and I feel like I could somehow sustain myself by cutting sentient vegetables out of my diet, I guess I'd give it a try. I'd absolutely hate it, but I'd give it a try.

Not as often as I used to, because they're expensive and hard for me to get. I would have to drive an hour to the nearest city or order them online, and the online vegan marketplace has had stock issues lately and comes with high shipping costs. Taste-wise they're pretty hit and miss. But I'm a sucker for Impossible/Beyond Burgers, Simulate Nuggs, and Gardein Fish Fillets. I'll always get those three if I see them in the store. Most of Morningstar's products are still vegetarian and not vegan, but their fake chicken patties are alright.

ShopVejii just closed their US marketplace and the Very Good Butchers stopped shipping fake meats. It's actually a really sad time for the online vegan marketplace.

  1. Not anymore than before. I do get stomach aches less frequently these days, but I dunno if that's because I don't eat meat.
  2. Nah. I mean, claiming moral superiority isn't why I decided to become vegan. I decided to become vegan because I hate what happens in factory farms and want to push the market away from them. I'm sure there are meat eaters that are much better people than I am.

Well, gelatin is one of the ingredients I check for when buying groceries. I'm not perfect though, and every once and a while I slip up and buy something with gelatin or milk powder or what have you. Other vegans might criticize me for this, but I don't believe in wasting non-vegan food that's already been purchased by accident or gifted to me. It's already been purchased, what good will it do throwing it in the trash? Then it rots in the landfill and the animal died for no reason.

I agree 100%, HOWEVER, I don't think being vegetarian is a privilege. I've been a dirt poor vegetarian, but vegan is impossible unless you are quite affluent.

yea almost everything i cook is vegan

but buying food from restaurants: impossible to avoid butter, difficult to avoid cheese.

literally no good vegan pizza from restaurants

vegan protein powder costs 2x as much (i.e. has half the protein of whey).

even doritos aren't vegan.

i also like honey and ppl are just wrong for getting upset about honey. beekeeping is a super awesome thing for the planet and for the honey.

let's say im on a road trip: goto is taco bell for spicy potato soft tacos. which aren't vegan cause they have mayo sauce on them.

i also dont have a problem with eggs, theoretically. i get ethically sourced eggs from people i know who raise chickens. that's a privledge.

so yea, i want to be able to experience some of civilization even if only 80% of my meals are vegan.

Pasta with canned tomato sauce, canned mushrooms, and MorningStar crumbles is one of my go-to's for a quick and easy meal

Or pasta with just vegan butter, some Daiya cheese

I cook a lot with potatoes because they're delicious, cheap, and they're so versatile that they never start to feel stale. So sometimes I'll throw together some chickpeas and potatoes in a pan, add some mixed greens on the plate and I'll have a complete meal. I have potatoes at least 2-3 times a week.

Depends on what you get. Rice and beans are cheap. Tofu is cheap and you can prepare tofu in sooooooo many different ways. You can make wraps with tofu and guacamole or hummus. Tacos. Salads. Burgers. Sandwiches. Stir fries. It's soooooo freaking versatile. just be generous on the seasoning and you're good to make whatever you want with it. Tofu is amazing. Vital wheat gluten / seitan is cheap. You can get 4 pounds for $20 and it will last you dozens of meals and like tofu, you can prepare it a lot of different ways.

Nuts and legumes are stupid expensive. Have you ever seen the crazy price on a thing of almonds? Plant-based milks can be expensive. I get a monthly subscription on oatmilk, it's like $16 a month for half a dozen cartons.

Yep. It's true. Even if you order plant-based from restaurants, most restaurants will still throw a ton of butter into everything unless you ask them not to use butter and risk them looking at you funny. Research vegan restaurants in your area. If you're lucky, you'll have 1-2 within driving distance or AT LEAST a restaurant with a solid vegan menu if not that. but many areas still don't.

Factory farms are like torture chambers for pigs and chickens. They smell like absolute shit, are notoriously abusive towards animals, and are notorious for hiring immigrants that have been trafficked to work there since no one else will. Cows have it a bit better than pigs and chickens because at least they have room to graze. But ground beef and cow milk is notoriously horrible for the environment and cow factory farming has its own set of problems like artificial insemination.

It's mostly that. a desire to contribute money towards more sustainable, less cruel food choices. the heart health benefits are nice since my family has a history of heart problems. but it's mostly because factory farms are unspeakably horrific

It's been a long time since I smelled it but yes it smells amazing. tbh I do miss bacon sometimes and haven't found any vegan substitutes that emulate the same texture. Wish Beyond Meat would come out with a Beyond Bacon or something like that, would be nice

That's more or less the "official" definition of veganism though: doing what is possible and practicable in any given situation. Though there is a pretty set criteria on what constitutes veganism, it's not treated as a universal standard that everyone, everywhere must adhere to no matter what. Veganism is for some people in some places untenable, for sure. The fun part is figuring out who is using their privilege to pretend that is their situation ;)

It is very amusing that this is how you sign off your explanation as to why veganism is only for the affluent. You don't have to sling shit at veganism because you're lazy and noncommittal. Plenty of vegans in worse situations than yours do just fine because it's what they want. You don't make your choices because veganism is stodgy and unaccommodating. You do it because that's what YOU want. Why can't you just admit that instead of dumbing down this whole conversation with your weak excuses? It's not like anyone's going to do anything to you lol.
