Im replaying Double Dragon (NES) and it cracks me up you can encounter the stage 2 boss, them just climb down a ladder so hes off screen and then the stage clear jingle plays.

There's that one European RPG, might be one of the Two Worlds titles, where you can get the villagers in the starter town to kill the big bad for you, triggering the ending cutscene for the game. One errant fireball and suddenly 50 villagers are wailing away at the boss.

I accidentally caused the Yharnam Pthumerian Queen in Bloodborne to get stuck in a wall and instantly die.

There were a few on the Sonic games for Genesis, Sonic 2 in particular iirc, where you could just jump and bounce on Robotnick's machine 8 times and beat him before he can even attack you once. Always found it amusing if and when you can pull it off

Zombie attack in FFX can kill braskas final aeon (aka sin) by making his healing totems actually hurt him instead.
Same with yu yevon.
Also using a phoenix down on that dragon like water boss.

The turnip phase of the first cuphead boss you can beat by just not attacking it lol

I'm pretty sure that in Castlevania 2 you can just walk away from the grim reaper boss to the next screen and beat him without fighting him at all, correct me if I'm wrong

Theres a few rpgs where you can heal super bosses and it will flip their HP counter to 1 and die in the next hit.

Oh, that reminds me... Killing the Raid Boss Master Gee by squishing him instantly with a door. No 4 player battle needed, just pull him toward the entrance with Singularity grenades and throw a last one to start the fight. *squish*

I watched a guy play a Yakuza 0 boss rush as Majima the other day.
Apparently while Kiryu has to fight the final boss normally, Majima can lure the final boss over to the side of the stage, stun him and then do a heat attack where he just dumps him overboard for a one-shot.

I saw another one where Majima used a heat move to take an ultra powerful knife off one of those Amon guys and then one-shotted him with his own knife.

Seems like a funny game.

Couldn't you use Phoenix Downs on some of the undead bosses in Final Fantasy back during the SNES era?

Dark Souls 2, first Dragonrider.

You can make him fall off the platform with his lunging attack and he instantly dies.

undead bosses usually resist to raise/phoenix downs, but there are some cases like FFV's T-rex zombie, FFVI Phantom Train, FFVII Gi Chieftain, VIII's Zombie president, IX's tree boss, etc.
they still take damage from recovery spell/items so an X-potion or elixir is an alternative if they are immune to revives.

The Souls series has a ton. DS1 had summoning Tarkus to essentially solo a boss and potentially kick it off the arena (Iron Golem), running away from a boss until it reaches the edge of the area and can be beaten in one hit (Ceaseless Discharge), shooting the final boss of the DLC with arrows outside of his boss arena, and the final boss of the story can be easily parried.

Elden Ring has plenty as well, many similar. You can again kill several bosses outside their arena (pre-patch), use an item to get duo bosses to fight each other, COUGH on one boss and wait for the poison to kill him, use the terrain to glitch out the AI pathing of a few, and so on. Just about every boss in the game has a cheese strat.

Also the cheese where you can immediately kill the plant boss early in Wind Waker by pouring a specific bottle of water on it

Not sure if this truly counts, but I'll mention it regardless.

At the end of the first episode of Duke Nukem 3D, you enter a large chamber to fight the boss alien. By walking across a hidden trigger in the entrance hallway, the door into the chamber closes and cannot be opened. If I recall correctly, the trigger works by activating the door, so if the door is manually closed before the trigger is activated, the trigger will actually open the door.
It's then perfectly possible to initate the boss fight, run back through the open doors and then wait for the boss to make his way to you. However, on the account of being too large to fit through the aperture, he becomes easy prey to inidrect fire (i.e the pipebombs you probably thought were of limited use).

Actually yeah DS1 has loads of varying amusingness.
-Take Firebombs as a starting gift and throw them at Asylum to skip getting your stuff.
-Taurus Demon can be tricked into jumping off the arena or looped with the plunging attack.
-You can throw fire bombs (only 50 souls each at a merchant nearby) over Capra's gate and take him out without even looking at him.
-You can stunlock Quelaag by repeatedly shooting the human part with a bow
-Tarkus will punt Iron Golem off the arena for you
-If you bring a Silver Knight over to O&S' room and perform the same kind of parry against the wall like for the Sen's gate skip, you can clip into the room momentarily and activate the fight, if you then run back to the bonfire, their AI will disable and you'll be able to beat the first phase for free.
-There's no perfect trick for Seath but you can get a headstart on him by having him beam down his own crystal while you're already running toward him to capitalise on that animation he gets stuck in.
-There is a summon for Pinwheel. Even if you're level 1, Paladin Leeroy can clear out the Bonewheels and then stomp Pinwheel for you.
-There's some fun to have with Nito. There's a guard stance that makes you immune to his Gravelord Sword, rings of silence and fog will mess with the aggro range on the skeletons, divine weapons will prevent them from reviving.
-Ceaseless has the run away strat where you his hand five or six times and he falls over.
-If Centipede Demon grabs you while right in the corner with you, he can clip out of bounds and hit a kill plane.
-Bed of Chaos has the two firebombs speedrun strat.
-Priscilla and Stray can be toxic'd, Stray can be hidden from and Priscilla can be poisoned without aggroing her.
-You can hide in the doorway against the twin Sanctuary Guardians with projectiles because the game doesn't put up a fog gate.
-There's an air roll trick to get into Oolacile dungeon early, you can then backtrack to a point you can see Artorias without having to enter the room and can snipe him.
-Manus can be shot from outside his room.
-Kalameet doesn't need to be bought down, there are spells to tank his fire breath and hit back since he generally only has a couple of animations to choose from. Apparently there's even a safespot further back from the cliff.

If you are tired of the git gud bots ruining the game's image and other assorted meme drones, you owe it to yourself to use these at your leisure and then tell people the game wasn't very difficult.

If you manage to get the Knights of the Round summon in Final Fantasy 7, it will trivialize the encounter with JenovaSYNTHESIS, the second-to-last boss. However, using this method will increase Sephiroth's health significantly.

In Final Fantasy 9, Gizamaluke has two cheese strats:

- Let Quina get to 1HP, then cast Limit Glove. The fight can end in a single turn this way.

- Your tent, the innocuous item you've used to rest over and over again during the game, can be used on Gizamaluke like an offensive item. It afflicts him with the Silence, Darkness, and Poison status effects, giving you a large advantage.
