All the reactions and everything is real, but it's because they manipulate the environment and make it so chaotic for the staff. These people are use to serving 10-20 people at once and all of a sudden they have 100 extra people waiting to get in a packed house. Hell's Kitchen had a decent amount of typical reality TV nonsense, but those two ramped it up way too much. Instead of saying 555-555-5555, you can combine colors, so green ultra violet yellow and you'd know to put in blue, yellow, blue, blue, red, yellow, yellow ,yellow. Then you dont need to remember numbers, you can just visulize someones color.
