I've been vegetarian my whole life (EDIT: well, pescitarian until around 14 or so), and I seriously doubt that I could go fully vegan. Replacing milk with soy milk is no problem, I do that anyway on account of taste preference, but between cheese, and all the various things that contain milk / egg as ingredients... yeahh, probably not gonna happen.

On the other hand sticking to vegetarian isn't hard at all for me, outside of the occasional case of "oh shit this has animal fat / gelatine in it? Oh well, gotta pick something else", but it never feels like a huge burden. But then, that's probably because by now I'm just that used to it; the idea of eating actual meat grosses me out tbh.

It's really not, can't even remember the last time I had a steak actually. I'm not even a vegan but putting meat in my mouth isn't really something I think about

The only time I ever wanted to be a vegan was after tasting my aunts tenants mothers food. For context, my aunt rented her downstairs apartment to an Indian couple. The wife got pregnant and her mother came over from India and made us all true vegan food. Real Indian cuisine. The spices were next level.

My god I have never eaten something so good in my life, and likely never will again, as we haven't seen them in about 5 years.

I wouldn't mind learning how to make vegetable side dishes that good.
