I'm going with Chinese because it is more prominent.
I would think French...but if you try to do French and fail...you will fail.
..But not many try.

Italian depends on the Region you are in.

I will assume Chinese in my region.

Pretty much every Italian hates Italian dishes made in America. Their food is everything to them. Like if you attempt to make a carbonara but put in any type of stock, they will get so mad.

I mean, from the limited exposure I have, American "Italian" food is nothing like genuine Italian food, but it's also generally pretty damn good food in its own right. That's probably the only one I know enough to comment on; I don't have much exposure to the Americanized versions of Japanese and Korean food, and I don't have much exposure to the non-Americanized (or well, westernized, since I'm in NZ not America, but similar outcomes still tend to apply) versions of everything else. (EDIT: On further thought, Indian also falls in the same category as Japanese and Korean food here for me. But that still doesn't help get an answer.)

How were you exposed to it?

I am in The North East of US, so there are plenty of good Italian places around.
Plus, I was raised Italian.

My uncle (or ex-uncle, I guess, since him and my aunt have since divorced) owned the first (and maybe still only? not sure) pizza shop in New Zealand to be approved by some association in Naples that approves pizza as genuine Naples style. He's since expanded into other Italian food as well, not sure how authentic that is although FWIW I know he's always personally been really passionate about it being authentic, and while he himself is British (with some Italian heritage, though), all other cook staff he employs are Italian - or I should say, this was the case last time I paid very close attention to it. Sadly he also became a bit of a conspiracist nutter ever since covid so I've kinda cut contact, and stopped visiting / reccomending his store.

As for the non-genuine kind, places serving that are generally a dime a dozen here. Or at least a dime each.

Ya, I am Three hours North of NYC...so really there are all kinds of good food around.
It would be safe to say I live in a food town.
But almost everything I cook has some Mediterranean bent to it.
