1. Slice the eggplant
2. Sweat the eggplant with salt for a bit to get rid of some acrid flavors
3. Dip the eggplant in flour, then egg batter, then breadcrumb/parm/herb mix
4. Pan fry them.on each side a couple minutes
5. Assemble in casserole dish with marinara, eggplant, sliced fresh mozzarella, little more marinara, and parmesan, then another whole second layer on top (I had 8 little mountains)
6. Bake
7. Top with fresh basil and oregano

Lot of work and messy

Ive never made it actually. Not a big eggplant fan. But I know it can be tricky to get right because it can be very bitter if done wrong.

To make it well it is a lot of work. Not difficult per se. There are shortcuts that are not my recipe and are not as good.

Most recipes call for baking. In fact, some don't have the pan frying step.

There may be some that are frying only? Not the expert here.

May I ask what made you a recent vegetarian? My gf who I have been dating a little over a year is a pescatarian so I have learned how to make a lot of vegetarian dishes. We only have fish maybe once a week, if that. I still have other stuff when I go out, but not often.

If you just pan fried it then it wouldnt really soften much and youd end up with bitter crunchy eggplant. Better to bake it. You can still probably fry it but you would still need to bake it first to soften it.

it's kind of a pain in the ass, but it's worth it if you know how to do it well. and it looks like yours came out good! i don't like layering mine personally, but other than that they look basically like how mine come out.

did you use storebought marinara sauce or did you make your own?

that's part of the reason why i like doing mine in just a single layer, then it's not as heavy and is better for serving as a side to pasta and meatballs
