You're only supposed to dip your sushi once. Ginger is to be eaten between each Sushi roll, not as a "desert", like I've heard said.
You shouldn't be putting barbecue or ketchup all over the sushi, or even worse mayo - which I've seen happen more times than I can count.
You should NEVER mix Wasabi and Soy Sauce - it's one or the other. "wasabi joyu" is a cultural taboo in all Japanese cuisine, except Seafood bowls.
