idk if they count, since they come right after a boss fight, but either *Dark Souls 3 spoilers* third place of Sister Friede fight or *Sekiro: Shadows Die Twice spoilers* second phase of the Guardian Ape fight

Final Jr. Troopa fight in the first Paper Mario is funny. The Koopa Bros., the bosses of the first chapter, show up and give a big speech about how they're much stronger than last time, and this will be the end for you blah blah blah, then Jr. Troopa just shoves them aside and fights you instead

Metroid Fusion: Ridley's sudden transformation into Neo-Ridley is pretty great.

And there's that subverted-expectations boss fight in Twilight Princess where you're fighting a water boss that kinda feels like a boring retread of OoT's Barinade, but then it turns out its just the head of a massive sea serpent.

For Twilight Princess, I'm guessing you meant Morpha instead of Barinade? The boss is also named Morpheel as another nod to the OoT boss
