My 8 year old niece just got a Switch, and I want to help her get into Mario, but I don't have a good gauge for difficulty

I think Odyssey is the easiest to complete. You only need a very small fraction of the total moons to finish the main game and there are a lot of easy ones to get.

In terms of casual play and completing the game, probably either Galaxy, maybe 3D World. Odyssey would probably be fine too. 3D World is mostly easy but I remember a couple of the normal levels towards the end of the game giving me, an experienced veteran of gaming, a bit of trouble. Doing anything optional can get really challenging. Galaxy is pretty comfortable the entire time.

Sunshine is the hardest, especially just casually.

Oh I forgot that pretty much everything in Odyssey is optional. Yeah I'd probably recommend Odyssey then.

Odyssey seemed pretty easy.
I remember some parts of Galaxy and Galaxy 2 were extremely frustrating due to level design and some challenges can take like tens or hundreds of tries to complete.

I would say that Odyssey is the easiest and the hardest is Sunshine.

And I know you said 3D, but if she hasn't already played it, New Super Mario Bros U Deluxe has a character that doesn't take damage from anything and only dies from pitfalls. Makes the game a lot easier for beginners.

The easiest is 3D World since you get a super leaf if you keep dying.

Odyssey is also easy but there's some advanced jump tricks that might be hard for an 8 year old that would make certain moons very difficult.

This, I don't even really like odyssey because it's so easy, but if it's designed for anybody it's young kids.

Also most of us were beating harder mario games by age 8, so I wouldn't worry too much.

I mostly agree, but 3D World, and Galaxy 1/2's hardest parts are harder than the hardest part of 64.

Still on average, yeah.

Sunshine gets you used to the hover nozzle then pulls it away for about one level in every world. You need to get to stage 7 out of 8 in each world to open the end level too. If you want 120 shines there's some pretty nasty/tedious bonus levels hidden around.
With the other games you get a lot more room to manoeuvre and get enough stars for the end. I don't think any of them are real deal difficult but I'd guess Sunshine for the most demanding.

Odyssey is the easiest by being the least punishing. There are no lives so your kid won't get discouraged
