For me its tough, but I know I love roasted pork belly where the fat is like loose jello thats crispy. Beef its a nice strip of fat on a ribeye that was left on and char grilled where its rendered out and crispy.

If I had to choose, maybe beef fat.

Beef, though I'll still usually discard it rather than eat it. Except if it's on corned beef; I'll straight up eat that with the meat.

Can't really do pork fat, except on bacon. And even that's tolerable at best.

Pork. The local Mexican supermarkets have this amazing pork belly chicharrones. Big, fat strips of pork belly, deep fried enough to make the skin crispy but not dry out the meat. So greasy but so good.
