ive been trying to remember my grandmas old biscuits and gravy recepie but have to go off memmory

the thing im stuck on is the meat used in the milk gravy

it was these reall small thin strips of meat (about a inch long maybe shorter)

the meat was either beaf or pork

if i can find this meat i think i can figure out the milk part from other milk gravy recopies

Beef would probably work better than pork, but it's really what you prefer at this point. Don't be afraid to experiment a little, lol.

If you know the approximate sizes, I'd suggest making them yourself if you've the patience to cut the meat.

We always used sausage. I bet in your case, it was chipped beef, which is pretty common in these kinds of gravy recipes.

I like to make a roux out of bacon fat, and then toss bits of bacon into it.
Stir in some milk, and you've got gravy.

Ya, no, I get it...

I work with foodies and we talk about this stuff...but I never thought of going straight to Corn Bread.
I'd probably dehydrate it and crumble it in.

No argument from me.

It sounds like we both grew up with some influence from the WWII Generation.
My Grandfather came out of poverty....never really made it anywhere, except are reasonable like, but as he said, he always had cash in his pockets...even in The Depression.

Nope WWII Vets rarely talked about it.
I heard bits. But he rarely talked about it.

He did say, and I still respect this, that he wanted no one with his last name to ever go through that again.
It's an Italian name, and they sent him up to Alaska, far from the European front to de-detonate unexploded ordnance. It's amazing I was ever born.
