He likes shades of grey, which makes me wonder why he made a character like gregor clegane who was cartoonishly evil just because.

Sometimes you need someone who is just straight up evil to help move things along. Wasn't he addicted to Milk of the Poppy? Might explain why he was so ornery all the time.

I dont know or remember all hes said about the theme of good and evil, but I think there are quite a few people in real life who are just bad. We never got in the Mountains head, he just seems to be a sociopath. Ive heard he might get headaches and dulls himself with the flower tea or something, due to his gigantism.

I can't remember if it was stated in any of the books, or whether it was a fan-theory, but I remember reading something about The Mountain constantly experiencing pain due to his gigantism, and how his cruelty was a result of that.

The White Walkers are pretty clearly 1000% Evil too. Same with the Boltons.

It's much more that GRRM shows how all the politics & war fucks over the little people regardless of 'which side' they're on and how the heroes are flawed people.

Even someone like Cersei, Polliver or Ramsay just come off as straight up bad guys. Not that much different than the fellowship and human armies vs the forces of sauron.

I don't know that GRRM dislikes good and evil so much as he dislikes simplistic villains. Joffrey is a piece of shit, but it's clear that he's a piece of shit because of Cersei. And you get two entire books demonstrating that Cersei is out of her fucking mind.

yea, the series also makes a point about how incest is this coin that can flip on either side, and Joffrey is a good example of the coin flipping on the losing one.

negative effects of incest + poor parenting from his mom and (perceived) dad isn't a good mix.
