Personally I advise against going into the store if you are grandfathered into a nice plan.

Usually they will make you switch and try to push you onto a new phone. The last time I just bought a new phone, swapped SIM cards and the phone usually walks you through it.

Take it with a grain of salt, however. I'm also old, and this is only my 3rd cell phone since 1998 or so.

If that works then that's what I'd prefer to do, 'cuz basically my phone's problem is that it was ancient when I got it and I don't need a fancy phone

If you swap sim cards 99% of the time you have the same exact phone number.

The phones themselves will let you import stuff from the other phone. I just setup a new iPhone 13 and it had a feature to link to my old Samsung S7 to transfer stuff.

If you have an old phone I would recommend first buying a phone online at whatever is a good price and looking at reviews on phones a bit and looking at your chosen price range and what features are most important to you. Then go into whatever cellular store you plan on using (make sure the phone you buy either supports that particular provider or is 'unlocked'), and have them transfer your number to the new phone and give you either a new sim or use your old sim (well if your phone is ancient can't do this), not sure if they can transfer contacts, I just manually put all the ones I care about back in.

Doing the number transfer process is either difficult or impossible I believe to do purely online.

Depends on carrier, I have T-mobile went onto their own website picked the phone I wanted, they shipped it to my place and I just swapped sim card and that was it.

Again the sim card dictates the phone number and that is what gives a cell phone cell service.

I just use a pay as you go phone. Works out cheaper for me and does what I need. You can buy those cheap enough if you just want a basic phone.
