I use CarPlay when i drive with my 8 since it has all my music on it and i like it syncing my car with maps. I just upgraded to the 13, but i chose to get the 128 gig, which is down from the 256 I had with the 8. My main question is, if I plug in my 13 for CarPlay, but use my 8 via bluetooth for audio, will it still let me control Music through the CarPlay App, or will i have to use the iphone 8 (now essentially an ipod) for that?

In my experience you can only have one phone connected at a time. My Bluetooth automatically connects with the car, but as soon as someone plugs their phone in then my phone is disconnected.

I've been able to change the Audio Source on mine to USB, which obviously won't function in CarPlay, but i was wondering what would happen if i tried that with 2 iPhones.

If you connect via Bluetooth it operates outside CarPlay. CarPlay is only specifically that one screen (and its subscreens) that you see.
