the key is to mix it with 3/4c of 110 degree water and a teaspoon of sugar, then butt chug it. otherwise you might not get a good rise on your bagels

Lately I've been measuring the temp of the water I mix yeast with and let it rise in my (off) oven. My baking has improved significantly
