It has to be prepped right. Seasoning, the salt, and/or the right preservatives. The thawing method is important too, and how you sizzle it when you cook it :)

If you just served me a medium-ass non-seared grey lookin pork sausage, itd suck baalgone too

and thats where most people go wrong with turkey sauage. It aint sushi.

You need something gamey & zesty for good jerky, mate. Chicken, for example, dont work.

I usually get the precooked turkey stuff when a recipe calls for smoked sausage. Like this:



I really can't taste the difference between that and pork or beef smoked sausage
