So the less common of the two

I'd cook with olive oil if I wanted to. Only reason I don't is that I don't like cooking with oils at all, but if I absolutely have to, I'll use it depending on the dish.

For others I use coconut oil. For still others I use corn oil.

I used to like olives and such things, but then I went to a pizza place with one of those giant pizzas, and it was covered in rancid olives, I couldnt eat right for months after that, and I havent fully recovered from that experience as I still am not as fond of olives as I was before. They have started to taste ok again, but still.

I usually use avacado oil for high heat applications. Mostly use olive oil as a fat additive to stuff like salads. Ive read that smoke points in cooking oils don't really matter that much when it comes to pan searing other than the smoke obviously, but it just seems like a waste to use a good olive oil to sear something imo

You can fry with olive oil. The smoke temp is high enough that you can even deep fry.

Olive oil imparts a flavor that might not suit the food. For a more neutral oil, I like to use rice bran oil.

With a few exceptions, if you're cooking with heats higher than 400F, you're cooking too hot. Olive oil is fine for most cooking as long as you don't lose control of the temperature.

Youre thinking of EVOO

Regular olive oil is a solid choice for moderately high temperatures
(E.g. id probably grab avocado oil for searing a steak)

If your oil is smoking then you are probably going to pick up some bitterness

Oh yeah. Never ever cook with extra virgin olive oil unless you're doing something extremely specific.

1. Because i have avocado oil in my kitchen
2. I like cooking steak in an oil so i can toss a bit of garlic and rosemary in there for extra flavor. Also i dont take great care of my cast iron and i dont trust it not to stick
