Carbonara typically uses a cured pork like pancetta or guanciale along with egg, parmigiano/pecorino cheese and black pepper:

While I prefer pancetta myself, my local Willy's stopped stocking it so I went with a goof I saw on the internet and added Swedish traditional comfort ingredient falukorv:

Of course it changes the flavor of the dish completely but if you like falukorv it's still very delicious. Here's a bad picture I took and I never try to plate things nicely:


I just love the creaminess of a carbonara sauce though, mmmh

Interesting. I dont like Falukorv that much but I would try this.

I love when ppl think outside the box when cooking, I can see this work.

I think I probably should have cooked the korv harder, it got stekyta but not enough. It should be borderline crispy.

What is it that makes it Swedish? You can order what you want to eat, and it doesnt matter that much if you order in English or Swedish. If you find the choice a bit limited, you can always make up your own meals in order to please yourself. Finding food on a budget in Stockholm can be pretty tough.

Stockholm is not all that big. At 4,621,000, you can expect to walk from one end of Stockholm to the other within an hour, and thats only if you do not stop at a caf or for lunch on the way. Stockholm is thus easy to explore, with the big metro line running in a fairly straight line from the Old Town to Sdermalm and on to Djurgrden.

Stockholm is all about food. You wont run out of places to eat, even if youre on a strict diet. Stockholm also contains a whole host of different types of people.

Thing is I wanted to do the same as with pancetta you know where you put them on low heat and the fat just melts. But I didn't know how much fat was going to be in them and my timing was off with the boiling pasta water

I'm amazed that your store would have falukorv and not pancetta. I've never even heard of falukorv or seen it in my life.

I do live in Sweden yeah. Pancetta is semi rare in regular grocery stores (I'm in a small city) but not very hard to find in more well assorted stores. Falukorv is everywhere

I'm jealous. I had to work a year at my job to get one vacation week and I hear 5 weeks is the minimum in Sweden.

It's the minimum for a lot of jobs. But it's not without its problems of course. What is? At least we have falukorv and pickled herring.

I want to try those. We have herring that comes in a can like sardines but I assume it's not the same. They're good on crackers though

Definitely not the same. Pickled herring is altogether different. Of course you could pickle your own but that's a bit time consuming.
