Depends on the situation and the workplace. Is it against the rules? Is it a place you intend to stay at for years or just one stop in your career? Ultimately, I'd still say it's worth a try if you really like each other, regardless of the circumstances, but there are things to consider that make this impossible to just answer without context

I used to work in a high end restaurant where everybody was dating eachother.

Literally there was only 1 successful relationship. The rest ended bad and there was tons of drama.

This. To add on, I specifically wouldnt date my boss or anyone who reported to me. Ive dated multiple coworkers (not at the same time) and it never got messy.

Fucked a few others. Thats a different story. I wouldnt recommend one night stands with coworkers.

How badly do you handle rejection/breaking up?

If you can cope with working with an ex, and you're not known for messy breakups, it's still a gamble because she might not have as good of a grip as you do. If she outright rejects you and makes things weird - and understandably so, if she's not into it - it could become a HR issue and it could put your job in jeopardy.

If you don't handle rejection/breaking up well, then if this goes wrong, you'll probably end up losing your job in the long run anyway.

I worked with my now wife when we met. It was nice tbh. We worked in different areas so even when we were going through bad patches it was easy enough to just not see each other. With that it was nice to have someone to bitch to about work that 100% knew what I was talking about.

In an office, no, never. It automatically gets you involved tangentially with any women at work since now theyre all gonna gossip about you. Plus any guys that pay attention. Youre basically putting a target on your back and saying youre free game to talk about.
