Fresh fries need to be fried 3 times in increasingly higher temperatures and allowed to rest after the first two cooks.

Most restaurants just cook once which makes them too greasy and not crisp enough.

No, never introduce potatoes to water. Even mashed potatoes should be baked first and not boiled.

Water is fine. You can pre soak to pull out the starch
