Made them for my wife, 2 girls (3 and 1 yr old) and myself.

70% dough hydration. Made the dough last night in 10 mins with 4 ingredients: white flour, salt, yeast, water. Toppings: Tomato sauce, salt, parmesan cheese, mozzarella cheese, basil, drizzle of olive oil for the Margherita. The others have Spanish spicy chorizo, rocket salad, and fresh parmesan.

This is literally the easiest and cheapest food to make (the Margherita costs about 70 cents). A stone and peel is highly recommended and is only about $30 combined. It's our favorite comfort food. I highly recommend it for people who haven't made pizza before!

Fresh rocket salad and fresh parmesan cheese. It's quite common in Italy and it's also my wife's favorite. I used to not like it but I totally came around. I'd say it's in my top 3 by now.

I would certainly eat it. But I probably wouldn't order it.
Or, I would want a little heat in the salad, as odd as that may sound.
Not hot, but not cold. Just a bit over room temp.

They all look great though, and I can tell you have nice water glasses as well.

Yes, Neapolitan pizza all the way. Puffy outer dough, thin in the middle, crispy bottom.

Looks a little thick for that style of pizza, somethings just off about it from a real Italian pizza, especially that last one. Something feels off, like its missing a sauce or dressing on top of the leaves.

so maybe like an 8.8 but not a nine.

periodically i make a bunch of bread dough, rip it into loaf/pizza crust portions, smash it flat in separate bags, and freeze it. i've found it works really well if you use extra yeast and dont give it time to bulk proof, means the yeast doesn't play out before you freeze it and the dough will rise nicely later on. if i know i'll need a portion i pop it in the fridge for at least 24 hours before using it.

i dont do pizza peels though. i fucked up with one years ago and never want to deal with that mess again. i get a good enough pizza on a pan, and if i want perfect crust i make a deep dish in a cast iron pan.

Hehehe, I don't know what it is...but it comes up a lot.
It is a thing, and I love it, tbh.

On paper you wouldn't think it would work, both being completely different countries.

But for whatever reason, we get along.
I've lost count on the number of people who are half Irish and half Italian that I've met.

Good idea, I'll try that with more yeast. I also make batches of frozen dough but the rise is noticeably weaker when frozen.

I have been thinking about those Ooni ovens a lot recently. I'm so close to pulling the trigger. Will definitely post the results if/when I finally buy one.
