AVGN actually brought up a good point about SOTN.

Because it's a Metroidvania style game, you're in one basic area for the entire game (i.e. Dracula's castle or something similar). In the classic Castlevania games and especially in Bloodlines, you're not just in Dracula's castle. This allows for a lot more interesting level design.

Portrait of Ruin and Order of Ecclesia take place in multiple places.

Obviously I haven't played those games, but they are still Metroidvania style games. However many levels there are, there's always going to be a bigger focus on level detail in the Metroidvania games which allows for less variety. But I think he was talking more about feeling sense of progress through the game. He also mentioned how you could go to one area and be too weak but then get powerful enough to go back to it later, whereas in the classic games the only advantage you could have was to get to an area with powerups from a previous area. In other words it's more about skill.

They could have both if they remade Castlevania 2 tho
