Most people just don't know how to cook it properly. I'm no expert, but I've heard you cook it upside down constantly basting it in its own juices. Once its cooked, you flip it right side up and wait 1/2hr to 1hr depending on the size of the turkey. This forces all the juices that are on the bottom to soak back through the meat of the bird, leading to a juicy turkey.

For some reason, we only roast whole turkeys. If it were "allowed" to just pan fry a turkey breast, there would be less (or at least different) complaints about how turkeys taste.

That's a good point, I pretty much exclusively buy chicken breast at the store that I pan fry every time

It's very easy to mess up. I find that brining it for 24 hours before cooking works the best. Makes it taste really good too.
