i just ate a nachos lunchable and i need to turn my life around

i like recipes that i can make a huge portion of and have it last for a week

I would suggest looking at the sites forksoverknives.com lots of plant based recipes and as youd guess, vegetables are plants

big fan of chili too, I only put beans and vegetables in mine though, I make the vegan one with cashew sour cream from ohsheglows, tastes divine and you can reheat for a week

Make a big ol vegetable lasagna. That'll last a while. A crock pot full of veggie chili, too. I usually do meat but chili reheats great for nearly a week.

ooh yeah i love chili. I'm not vegetarian, but I just wanna incorporate more veggies into my diet. I'll try to find a good chili recipe with a lot of vegetables

hmm do you have any stews in mind? most stews I've made are pretty meat heavy and mostly only have potatoes/carrots as veggies

I have a thing I make that I call "A Leeky pot"

You'll need.

  • Dutch oven
  • 3 whole leeks
  • A small carton of white mushrooms
  • 1 head of bok choy
  • A couple of handfuls of Brussels sprouts
  • Salt, pepper, minced garlic, oregano, olive oil


  1. Wash and cut up all the veggies. Scissors work great for the leeks.
  2. Dump everything into the Dutch oven
  3. Add 1 tbsp of minced garlic
  4. Add salt, pepper, oregano, olive oil all to taste.
  5. Give it a good toss then cover the Dutch oven and bake at 350 degrees for 45 minutes or more.


You can substitute bok choy for other things, here's some suggestions:
  1. Napa cabbage (virtually identical)
  2. Fennel (changes the taste a lot and it's a little more crunchy)
  3. Celery (fresh only, doesn't really come out great but it works. Not recommended but can be done in an emergency)
  4. Asparagus (changes taste but still comes out good)
The oregano is optional. You can also add other shit if you want like thyme.
