Its my husbands birthday and it was his request. Im also making scallops with corn salsa as the appetizer. And for dessert, individual sized tiramisu (one of his favorite)

Will try and post pics as I go. First step, I broiled some lobster tails with butter, Cajun spice, white pepper and minced garlic

Ugh true. I chopped them up because thats what the recipe Im following calls for. But then again it said to just boil the tails plain and I thought fuck that imma broil them with butter and stuff. Should have just kept the tails whole. Next time

Yes. By C-section no less. Will be 6 weeks soon. And I also did all the laundry (mine, husbands and babys), washed the dishes and bottles, and cleaned the kitchen up after prepping everything. In between caring for my daughter. And its not even 3 pm yet! Though Ive been up since 5 am lol

Shes such a good napper so I can get everything done while she sleeps. I just finished setting her down for another nap after changing her and feeding her.

Ive got this stay at home mom shit locked down!

Im done prepping so I will just have to make the risotto, sear the scallops, warm the salsa and just put everything together.

I made the tiramisu last night and let it set overnight. Looks small but I made a few. I had to eat one. For uh, testing purposes of course


And theyre very filling with all the cream. I used mascarpone cheese, cream, sugar, espresso, Kahlua and lady fingers. I grated some dark chocolate on top. Very easy to make

I used my shears and cut on top of the lobster shell. Then used a spoon to pull the meat out, until the tail which I keep in. Squeezed the shells back and then set the meat on top. Then brushed them with the melted butter, garlic and spices. Broiled for about 6-7 minutes. On their own they are delicious and super simple!

Nice! I love seafood so much. And I plan on making shrimp ceviche tomorrow! Since the corn salsa uses a lot of the same ingredients.

Thank you! And yeah they really do. Its just easier to make them look pretty vs having one big tray of something. Like when I made cheesecake using a cupcake pan a few months back. I only did it because I didnt have a cheesecake pan but they turned out looking so nice that I will always make them that way.

I assume I am allergic to any seafood, as I was as a kid, and haven't been tested since.

But I will judge your countertop, which is a 10/10. Very Plagioclase.
Actually, the food looks amazing, I just don't think I could have more than a bite.

It would go with good minerally wine.

Welp, dinner is prepped and not for a few more hours. House is clean and baby is asleep. Time for margaritas I guess.

And its time consuming as you add stock a little over time and stir until the rice is cooked right. 20-30 minutes just working over the stove. Its a pain. And yet my husband asks for it every year for his birthday lol

And I have never tried risotto becauae I know getting the texture right is hard.

My shrimp allergy is fine, at least I can have everything else. The only thing that sucks is I did not get allergic until 18 and grew up in Florida and had shrimp all the time. Oh well.

Thank you! It helps that my husband and I make a great team with our daughter. He will get her in the evenings and first night feeding so I can catch up on sleep.

Oh man sucks to have had the taste of shrimp and then lose it. I love shrimp. My parents are Egyptian and lived in Alexandria so I just grew up on seafood. My mom makes the absolute best shrimp dishes. Well seafood in general.

This is the wine. A bit overpriced for what it is imo but its the one he likes most so its what I got

One of the greatest sandwiches I've ever had was a tuna salad sandwich, my mom accidentally gave it to me. I was at 'The Track' in town....I remember being sick as a duck laying on a park bench. We are very lucky! And also my cousin gifted us their snoo, which is some expensive af smart bassinet. That thing puts her to sleep like no ones business. It took some time to figure out her sleepy cues and wake windows but Ive been getting the hang of it. I used to wait until she was asleep on me to stick her in there, but shed always wake up and cry. Now I put her in after she starts yawning and rubbing her eye, but still awake. She stares at me as I strap her in like WTF mom why you do dis to meeee and cries a bit but the snoo rocks her to sleep. Shes been napping 2 hours now.

She does have her days where she is a lot to handle, nonstop crying/fussing all day, etc but for the most part she will generally nap in the snoo 2-3 hours and be up 1-2 hours in between.

Aaaaand right on cue she is up. Time to go feed her! My husband should take her in an hour so I can finish dinner and my hope is she will be asleep by the time its done so we can eat together. That rarely ever happens though. Its like she has a sixth sense for when we are both eating dinner at the same time.

Ya, it really is a good memory. My Mother was pretty cool. She only made it to about 35'sh....I think she fell asleep at the wheel, coming back from a folk music thing. ~Kinda sucks. I try to use that as a way of being a better person, which can be a struggle in and of itself. Most people don't recognize that perspective. >_>

I have a new coworker who is in a similar place though. So that kinda helps.

And there are off-dry Rieslings. As well as straight-up Dry Rieslings.
I like a nice off-dry, like Clean Slate, it's pretty basic, but easy drinking.

There is another one that I had that is actually rather minerally, that would probably work with seafood.
~The question becomes, is it available in your area.
Distribution makes suggesting wines kinda difficult on the internet.

How tragic. Im so sorry for your loss. She must have been an amazing mom if you think of her so fondly. All you can do is be the best you for her, Im sure she is happy knowing that.
