You set the temp depending on what you want rare/medium/etc then because of some complicated physics and chemistry the steak comes out perfectly no matter how long you cook it. Then you pan sear for like 5 minutes and you're done. I'm still a huge fan of "regular" Montreal steak seasoning and I wanted to try something new and I saw this while wandering around Costco. I've also tried making my own blends manually trying to follow some videos on how to properly season things.
