They'll send out a summons to a bunch of people that basically puts them "on call" for jury duty for the week. Each day, they call in a portion of the people they have on call that week (if any). They then have a screening process where the defense and prosecution ask questions to "weed out" unsuitable jurors until they get a full panel. The last three times I got a summons, I was never called in.
