I found 119, the last one I couldnt find was around the Gerudo desert, got from a sidequest with 3 Gorons. It wasnt showing up with the radar so I couldnt find it no matter how long I searched.
Bothers me to this day that I didnt find it by myself.

I think I found them all. Now solved, I wish I could say no but I did use a guide that one time (2) for that weird shrine with the constellations and placing the objects in the correct holes which even after youtubing, I still did not understand how you were supposed to get the answer. It befuddles me to this day.

Wait no I did use a guide to find one shrine, it was in the snow area and for the life of me I couldn't figure out how to get to it. So much for bragging rights oh well.

I'm still quite proud that this is the first console zelda game where I used a guide the least. It really made me realize that I prefer the mini puzzles nature of the shrine rather than one looong dungeon puzzle (I didn't use a guide with the guardian dungeons but I didn't like them either)

I got to about 104, with a little help here and there, but not much. Ought go back sometime to see if I can find the rest, but they're getting scarce now.

I beat the game with only... 60 shrines?

I don't have time to wander around aimlessly looking for shrines that I didn't need to beat the game

I only used a guide to find the NPCs who give you shrine quests, I never used a map or guide to find the shrines themselves.
