would it be okay to take the blueprints for a car that isnt sold anymore and then build your own car (but not sell it)?

i think so, but pirating old games is the same sort of thinking. What you are doing aint hurting nobody and you cant give money to the company for that item these days.

I'm not sure how it follows that you're morally allowed to do something you otherwise wouldn't be morally allowed to do because someone isn't selling you a luxury item.

It's either piracy is morally acceptable or it isn't.

This. What you can buy legally, you absolutely should. But if there's no way to do that anymore (whether it's old video games no longer buyable because the digital store shut down or old movies/anime not being licensed on any legal streaming services anymore) then piracy is fair game.

Pirating in general has always been in a weird place, morally. Most people would argue that borrowing a physical copy of a movie from a friend is A-okay, but the same people would say that pirating a movie you intend to watch once, which is essentially equivalent to borrowing the movie from a stranger on the other side of the world, is morally wrong.

you quoted about something thats not currently available. that'd be different than currently available for sale.

but yah, i think in general:
- if its out of print, not available for sale on that platform anymore, etc (even if available second hand) = okay to pirate, just don't sell it
- if you can buy it and it gives the publisher money if you do so = dont pirate it, its not cool (but eh, its not the end of the world if you do)

feels pretty simple. cos at the end of the day, who gives a shit what one person does or doesnt do

I don't think the argument about it being morally okay is really all that relevant.

If gamers want to play old games and there's no easy way to do this outside of piracy they're going to pirate. If publishers don't care about selling their old games then gamers aren't going to worry about feeling like they're stealing them. Morals aren't really relevant really. Nobody is doing the right and moral thing and that includes publishers.
