I agree. Nothing is worse than waiting for a 2nd form and it never coming. Tyen you're left withthe disappointment of that being it.

I like games that have you fight humanoids as the last boss, preferably with them in a party like Golden Sun or something... even though that's not technically the last bost

Technically, the final boss of Skyward Sword fits this.
I'm aware there's like a mook rush and then a boss between, but the actual final boss character basically just has 1.5 phases.
